
Say aloha to your new favourite meal! Vegan Loco Moco is a classic Hawaiian lunch special made from rice, Very Good Burgers, plant-based egg, and mushroom gravy.
What really brings everything together is the gravy. Pour it all over the rice, egg, and burger, and watch everyone at the table go a little loco (in the best possible way).

INGREDIENTS
Mushroom Miso Gravy
- 3 tbsp avocado oil, or other neutral oil, divided
- 1 medium yellow onion, sliced
- 2 cups cremini mushrooms, sliced
- 2 garlic cloves, minced
- 2 cups no-chicken broth
- 2 tsp miso paste
- 2 tsp soy sauce
- 1 tbsp ketchup
- 2 tbsp cornstarch, arrowroot flour, or brown rice flour
- salt and pepper
Loco Moco
- 1 pkg The Very Good Burger OR Smokin Burgers
- 4 cups hot steamed rice
- 4 pieces cooked Baked Plant-Based Egg or egg substitute
- 2 green onions, sliced
DIRECTIONS
Mushroom Miso Gravy

In a large pan over medium-high heat, add 1 tablespoon of oil. Once hot, add the sliced onion, season with salt, and sauté for 5 to 7 minutes or until almost translucent. Reduce the heat to medium-low and continue cooking for 10 minutes or until soft and sticky. Set aside.

In the same pan over medium-high heat, add 2 tablespoons of oil. Once hot, add mushrooms and saute mushrooms for 5 minutes or until browned and tender.

Add caramelized onions back into the pan with mushrooms. Add in garlic, broth, miso, soy sauce, and ketchup. Stir well, scraping bottom of pot to get any browned bits off. Bring to a simmer.

In a small bowl, combine cornstarch, arrowroot, or brown rice flour with 2 tbsp cold water and stir well to make a slurry.

Slowly pour slurry into gravy while stirring well to combine. Allow to simmer, stirring often until the sauce has thickened, about 5-7 minutes.

Taste and adjust seasoning as desired.
Loco Moco

In the meantime, in a non-stick pan over medium-heat with a little oil, cook burgers for 6-8 minutes flipping once.

To serve, place 1 cup of rice on each plate, top with a burger, pour gravy overtop, and top with plant-based egg and green onions.
