I picked this up from Blue Heron, and it was pricey - but so worth it! I used veggie cubes (but I doubled the cubes and water) earth balance and melted it all together, then left the beast in the dish marinating for a few hours before cooking. I cooked it for the 45 minutes in the liquid, then took it out and baked for another 10 minutes and the outside went nice and crispy. It was so good.
I brought this to Thanksgiving dinner and being the only vegetarian I was pleased with how many family and friends tried and went for seconds! Although it was so yummy I ish I bought 2 :)
The perfect addition to my vegan family meal. Everyone, even the meat eaters loved it!
I purchased a roast beast for the first time for Christmas and was really impressed. After reading some of the reviews, I was worried that it would be dry but I basted it as recommended on the label, and it came out lovely and not dry at all. The only issue I had was getting it hot in the middle. Eventually, I turned the heat up to 350, cut the beast in half, and placed it cut side down in the pan with the rest of the basting sauce, and it worked! I served it with mashed potatoes, roasted brussel sprouts, cranberry sauce and mushroom gravy (Minimalist Baker recipe). I haven't had a traditional Christmas dinner in years and it was soooo good - my family was very happy! For reference, we were a family of 4 and had plenty of leftovers.
So Delicious for a holiday feast!
